Current food obsession: Tofu & Broccoli filled tortillas
Plant-based protein packed tortillas with fresh dressing that gives "cheesy" vibes
Last weekend before heading out for grocery shopping, I had to make a quick lunch and well, let me tell you, there was not much left in our fridge. I used whatever I found.. and it turned out so great & delicious that I added everything to my shopping list just to make the recipe again the next day.
The recipe is made out of a super quick red lentil hummus, veggies, tofu and a cheesy style dressing. You can use the dressing inside the tortillas or on the side - up to your preference, but I chose to split it - a little bit in the tortilla and some on the side what probably caused the “cheesy” effect of the tortilas.
Start with the tofu so while it is in the oven, you can fix the rest and be done in 20 minutes!
Baked Shredded Tofu
Shred 1 tofu on a baking tray, drizzle with olive oil and season with some paprika, cumin, salt and pepper and bake for 15 min on 200C.
Quick Red Lentil Hummus
Blend the following ingredients until smooth:
1 box/can of cooked red lentils
1 tbsp of tahini
1 tsp of cumin
lemon juice from 1/2 lemon
salt, pepper, dried garlic to taste
3 ice cubes
Veggie Filling For Your Tortillas
I used steamed broccoli, 2 sticks of fresh celery, half cucumber and some fresh parsley- basically all I had left in the fridge that day. Chop everything into smaller pieces and put it in a big bowl. Then add your baked shredded tofu.
Cheesy Plant Based Dressing
Mix the following in a bowl:
200g plant-based sour cream
1 tsp tahini
1 tbsp mustard
1 tsp lemon juice
fresh chopped parsley
1-2 tbsp nutritional yeast
salt, peper, dried garlic
All that you need to do now is assemble. You should be able to fill 4-5 large tortillas.
Spread 2 spoons of hummus on each tortilla, add the veggies & tofu and some dressing as well if you like. Then roll the tortillas and grill them from both sides until they are golden and crispy on top.
Serve with the dressing on the side and some home-made ice tea or a raspberry lemonade and enjoy!
